Here's a video of me using a Smite 5 Netherrite Axe to kill Zombies. The second Zombie took two critical hits with Smite 5 to kill. I'm unsure of how to replicate this bug, they seem to just rarely spawn with much more health.

Can confirm, in Surivival you break the shulker, tool or no tool, and it's items drop aswell.
Disabling all Datapacks fixes the Issue! I think its an NBT issue, as NBT was massively changed this Snapshot. Thank you so much for the Help jpsmith! Have a good rest of your day 🙂
