Happens to me too!
While mounting a strider, it suddenly stops for 3 seconds and then continues.
While eating food sometimes I fill a hunger bar but still tries to consume another piece of food after it is full.
Mobs sometimes can have rubberbanding (again, like the strider stopping).
I really think it is related to autosave as this lag issue happens periodically.
