It turns out this was a resource pack-related issue. I'm sorry for not checking and I will take a closer look next time I report something. Could this be closed please? 🙂
Same thing happens to me. I play on Win10 and my friend plays on an iPad. They can sometimes (It will work normally, but then 5 minutes later it doesn't...) join me, but I have never been able to join them. So infuriating.
I think the only way around this right now is to restart your switch by holding down the power button.
