I also had a similar issue. Our Minecraft updated on the Xbox and the second player to log in was reset or the player data was reverted back to an older time or changed in some way. The point is it was not the character location, inventory and levels that I previously had. The second person to log in always logged in as this buggy character and when I try to log in the whole game crashes. The enderchest is empty too, but the owner of the world has no issues just the secondary characters for some reason.
