Ran into this tonight (4/23/2020) as well. I was running with a diamond sword with Smite V and Fire Aspect II, and using a Strength II potion. Killed multiple zombies and skeletons in a single hit (10 hearts)–no trophy. Two other trophies were awarded without issue during this play session, and later in the evening two more trophies popped without issue in the same world.
This is on a PS4 Pro running Bedrock Edition 1.14.60.
