Maybe it is because it isn't the hour at which villagers go to work (you broke the his profession block when it was night time, almost night time or the start of the day) because when you break the block at that time, they will keep the last profession they had, even if you put different profession blocks.
Bruh, I died like this in my hardcore world, but I didn't think this was a bug 😞. It was on a end city ship.
