I'm having same exact issue on 1.21.0.20 version and it's confirmed on android, xbox one and PC, invite sends me on xbox to normal version.
On normal version Minecraft works perfectly but on 1.21.0.20 it doesn't.
It's really frustrating, especially with hardcore finally being out. So I hope it will be dealt with quick because it seems it's going on in multiple versions
