Got some information on this bug and how to replicate it.
Piglins have a certain range at which they are willing to run towards gold, about 9 blocks.
If gold is outside of this range, but still in their sight, piglins will start making noises.
It doesn't matter if there's something obstructing the path or if there's a clear flat road towards gold, as long as piglins are far enough from it.
