This still continues to occur for me as well.
Added several mobs back to my barn following the update fixing the mobs despawned issue. After that, like many have noted, I traveled through the nether and back to the overworld some decent distance away (a couple thousand overworld blocks). Mobs in the barn were gone when I returned. All mobs had been bred before being left alone, and corralled in an 8x8 space (different spaces for each animal, so they couldn't all be on a chunk border).
Trying to remember for sure, but possible that I died at some point nearby the barn during the same timeframe. Not 100% sure on that, though.
This was on Nintendo switch, local single player, in a world that has been around for several years now.
