I had this problem one the xbox one.
I'm seeing this as well.
I have the same problem. I found if I click the profule button and then use the RB button to move to a different skin the profile loads.
I am seeing this in 1.13.0 ( Bedrock)with iron golems and villagers. I didn't even have to go to the Nether
