I'm having the same issue. At first, I thought it was because my base was located in a dense forest and the fancy leaves were lowering my framerate. I turned off fancy leaves and not much changed. I doubt any video settings i change would fix it either and I don't really want to lower video settings on a console game.
I'm currently encountering this as well. Every time I save and quit, my game freezes and I have to force close it, with the Switch prompting me with an error (just like the error screenshot in the post). I haven't noticed if it happens because of the touch input or controller input like OP stated.
Edit: This has only happened to me on 1.9.0 and not on 1.8.1 as shown in the bug report.
