Hi! I have brilliant news! I made a copy of this world and I am happy to say this glitch has been fixed! The minecart occasionally lags, which is normal, but travels at a much faster speed!

Hi! Yeah, just attached an image of the part of the world that started this. It affects the rollercoasters around it, but not ones off in the far distance. Sorry for the mess of it, it's not finished yet 😃 🙂.
