Just found out that I can get past this issue by opening the game while signed out, then signing in to my xbox live account while on the menu. However, while I am able to go into my own worlds and everything seems to work fine, I cannot join other people's worlds, even when they send me invites over xbox live.
This happened to me too on xbox. Made it pretty much impossible to locate the last pillager because there is a big complex cave that is under my village and the pillagers spawn down there sometimes.
