Can confirm that this also happens on Linux.

This sounds like a regression of MC-248936.

This is a duplicate of MC-154903, you have to enable the "Discrete Scrolling" option in Options → Controls → Mouse settings

The Discrete Scrolling Option fixed this issue for me on macOS Monterey 12.6.

Changing gamma settings outside of the game is not supported. Duplicate of MC-249799
