The Nether Brick texture is pretty bright compared to the Java edition. Can you please fix this issue? This has been yet another problem that hasn't been dealt with.

This is intentional behavior. Notice how the texture got updated, even though it's still bright. Some things are different by design, look at the stripped spruce and dark oak logs for example.
The Nether Brick did get a new texture, so it won't be changing its tone anytime soon.
