Before conversion, my skeleton horses were all equipped with saddles. After conversion, the saddles are nowhere to be seen.
To Reproduce
Spawn a skeleton horse on Xbox One Edition and equip it with a saddle. Convert the world to Bedrock Edition and the saddle disappears.

They disappear because skeleton horses don't need saddles to be controlled in Bedrock. To be more precise, they actually don't even support them. You should be able to ride it no problem still
