After I fenced in 2 Sheep & 1 pig in a Plains or RIver biome (Not sure which), I went across a river to the neighboring Savanna biome to collect seeds. When I came back all fenced in animals were gone. I was gone for little over two minutes.

Did you interact (tempt, name tag, or breed) with these mobs in any way? If the only thing you did was build a fence around them then they're supposed to despawn.
