I spawned a lot of iron golems in a flat world and they doesn't attack me every time I hit them.

Did you spawn them with a summon command, or by building them out of iron and carved pumpkins/Jack-o-Lanterns?
Player-built iron golems will never attack the player. This may also be the case for iron golems spawned with the summon command.
