A few times now villagers who I have previously traded with to “lock” them in their professions suddenly change profession, to one which there is no existing job block for. This happened with librarians becoming fishermen and a shepherd becoming a mason despite no other job blocks within a huge radius. Because of this there is no way to “reset” their profession and they become stuck in that profession.
