When You Eat something or break something the particles are behind water, So if you are looking right at water and you eat something the particles are behind the water layer!

Also you selected the wrong project, the Minecraft launcher is only for problems with the launcher and the start of Minecraft, the project Minecraft is for all the gameplay stuff 😉
