Double clicking the ingredient currently brewing inside a brewing stand, removes the item but continues the brewing.

If you have an item brewing inside the brewing stand, and you have the same item in your inventory, if you double click on the item in your inventory, the brewing item comes out, but you are still brewing. However, at he end of the brew cycle nothing will be made.
