The color of texts are darker than the source font textures, like #FFFFFF (pure white) -> #FCFCFC (impure white).
How to Reproduce
Take a screenshot in menu.
Compare any character to the resource:
assets/minecraft/textures/font/ascii.pngassets/minecraft/textures/font/ascii.png

The text textures are white, not black; signs color it black.
Look at chat, mob names, title commands, etc.
Can't confirm with the text on signs. What instances of text have you specifically experienced this with?
