Taiga zombie villages generate Jack o'Lanterns.
Any kind of light source (maybe apart from the weaponsmith lava) should not be generated in there.
The datapack is attached because you need to use it to reproduce.

It is a game feature that all light sources are extinguished in zombie villages. This should include Jack o'Lanterns. It kinda removes the look of the village that is abandoned.
