When I do /entitydata to give armor stands hands, it says (Invalid command)

Hello!

/entitydata is a command that was removed a few years back. Try this command:

/data merge entity @e[type=armor_stand,sort=nearest,limit=1] {ShowArms:1}
/data merge entity @e[type=armor_stand,sort=nearest,limit=1] {ShowArms:1}
