The normal campfire has the statistic "minecraft.custom:minecraft.interact_with_campfire", displayed as "Interactions with Campfire" in the Statistics menu. Soul campfires do not have their own statistic, nor do they update the campfire's statistic.

I'll try and reproduce it again and see if I can figure out exactly what was going on and update the issue.
I was able to recreate something similar; the soulfire did not update the statistic but it was still counted after another interaction with a normal campfire. When I interacted with the regular campfire, the count was not always updated either, but it did eventually jump up to what is expected.
Huh, I did use the scoreboard yesterday. Not sure why it wasn't updating. I guess this is invalid? I'll open a new issue if I can figure out exactly what was going on.
